Flower Popsicles

For hot summer days...


Flower Popsicles (makes 8-10 pops)

- 1 cup sugar
- 1 cup water
- 2 tbsp to 1/2 cup fresh edible flowers and flower petals (rinse flowers and remove petals)

Choose your own fresh edible flowers. These can often be found at Farmer's Markets, but make sure they are organically grown without any pesticides or chemicals. Some flower choices include lavender, nasturtium, violet, rose, lilac, jasmine, pansy, chive blossom, snapdragons, marigolds, hibiscus, calendula, and borage.

Heat the sugar and water in a saucepan over medium heat until sugar is thoroughly dissolved, and simmer for 3 minutes.

In popsicle molds, freeze the sugar and water mixture without the stick for one hour, then remove from the freezer. Depending on how many flowers and colors you want in your pops, add between 2 tbsp and 1/2 cup of the petals and smaller whole flowers, arranging them evenly throughout the pop (you may have to push them down). Add sticks and freeze until solid.

For extra flavor, add a tablespoon or so of rose water, orange blossom water, or for grown-up popsicles, a floral liqueur such as Crème de Violette, Crème de Rose, or an elderflower liqueur.
